I have been perusing healthy eating recipes in preparation for embarking on a food detox for the next few weeks. In doing so, I came across this recipe and realized that I never posted it after giving it an initial test run. When reading the ingredient list, it comes off as too simple to be tasty. However, the opposite is true. These little rolls actually carry a rather flavorful punch and are also filled with a variety of pleasing textures. I am not the biggest watercress fan, so I chose to use radish sprouts in its place, for a different kind of peppery kick. I also opted for savoy cabbage, knowing that it is more pliable. I used some of the more tender leaves toward the center of the cabbage, hence the yellowish tint.
1 cup chopped watercress
1 julienned carrot
10 mint leaves
1/2 mashed avocado
1 halved cabbage leaf
Step One: Toss watercress with carrot, mint, avocado, and salt. Roll in cabbage leaf.
